Key Moon (aka Qimen and Keemun) black tea has a thick rich liquor and a floral, slightly smoky fragrance. Made from darkly oxidized tightly rolled leaves, a deeply rich concentrated flavor is promoted, reminiscent in character of a Burgundy wine.
PROCESSING:
Black tea is the most process of the tea world, being intentionally oxidized from 80%-99%. This Qimen from Anhui, China is on the lighter side of black teas, being oxidized to a roasty-toasty 85-90%.
STEEPING:
This is our recommendation, but we encourage you to experiment with steep times and water temperature to explore your personal preference:
3-5 grams (~1 Tablespoon) of tea leaves
14-16 fl oz of water 203F
Steep 1: 4 min
Steep 2: 6 min
Steep 3: 8 min
